Among Louis Roederer's champagnes, the Carte Blanche champagne, has the largest dosage and therefore the most sweet champagne in their production. It is made of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier from 40 different parcels in Champagne.
To ensure the quality that Louis Roederer produces they use multiple vintages to recreate the same Non-Vintage every year, this means that approximately 10% of the champagne comes from Louis Roederer's famous 'Reserve' and is selected from among the oldest vintages.
The wine is fermented in the bottle for 3 years, and the 'dosage' (the sugar liqueur) is added when the fermentation in the bottle is finished amounts to approximately 38 g. per liter against 11-12 g. in Brut Premier. After the disgorging, he will have higher levels according to 6 months in the shipment.
